Our story

Back in 2019 in Paris, two friends, Charles and Victor, opened a brasserie together - the kind of place Parisians disappear into for a 3-hour lunch.

They called it La Nouvelle Garde: a promise to eat and drink the French way, done properly, 100% homemade, cooked from scratch from the highest quality seasonal ingredients.

They served classic French dishes prepared with care, generosity and excellence in beautiful, relaxed spaces full of energy.

Guests loved it!

So they opened another one, and then another one. Each with its own name, personality and story, but always with the same love for French food and hospitality. And 10 brasseries later, it was finally time to bring it to London.

In July 2026, in Sloane Square, Brasserie Olivia was born.

This is just the beginning of our London story, and we'd love you to help write the next chapter.

The role

As a Bar Assistant Manager , you’ll work closely with the Bar Manager to run the day-to-day bar operation at Brasserie Olivia.

You’ll lead and support the bar team during busy services, making sure drinks are prepared quickly, consistently and to the highest standard.

You’ll support the Bar Manager with rotas, ordering, stock and waste, while helping train and develop the team.

Our bar sits at the heart of the restaurant, so you’ll also be present with our guests, bringing energy, personality and great hospitality.

What success looks like

• You’ll help run and organise a bar where drinks are prepared quickly and consistently, even during the busiest services.

• You’ll ensure the bar is fully prepared for service, with stock, equipment and mise en place ready before the first guests arrive.

• You’ll maintain excellent standards across cocktails and drinks, making sure everything is consistent and beautifully presented.

• You’ll support the Bar Manager with rotas, ordering, stock management and waste control, helping the bar run efficiently.

• You’ll coach, train and support bartenders, helping build a confident, knowledgeable and high-performing team.

• You'll support recruitment by coordinating trial shifts and identifying candidates who will strengthen the team.

• You’ll create a great guest experience, interacting naturally with guests and bringing positive energy to the restaurant.

• You’ll work closely with the floor and kitchen teams to keep service running smoothly throughout every shift.

What you'll bring

• You’re already working as a Bar Assistant Manager, or you’re an experienced Senior Bartender ready for the next step.

• You have strong experience working in a high-volume restaurant or bar environment.

• You have excellent cocktail knowledge and are confident in preparing all the classics quickly and consistently.

• You have experience with the operational side of running a bar, including staff rotas, ordering, stock management and waste control.

• You’re confident leading a team, giving feedback and helping bartenders develop

• You’re quick on your feet, stay calm under pressure and know how to keep things moving during a busy service.

• You’re positive, presentable and comfortable interacting with guests and creating a great atmosphere.

• Good wine knowledge would be a plus.
