Job Description

You will assist the Sous Chef in our Italian kitchen department. Your eye for detail will help you excel, you will love leading and motivating your team to drive company strategy in all elements of the business.

• Monitoring the Italian kitchen and the staff to ensure standards are maintained
• Cook to spec and work within company targets
• Lead the team to deliver top quality standards on every shift
• Support with the training and development of the team
• Support with stock control and ordering
• Training new employees on the Company Standards and Regulations
• Monitoring performance of the CDP’s and the helpers
• Ensuring all food products to be prepared up to the Company Standards
• Oversee the kitchen and veg prep operations
• Leading teams and distribute job tasks
• Keeping the kitchen fully equipped with all the tools and inventory
• Ensuring that the quality of food are consistently high and that hygiene standards are exceeded
• Organizing, recruiting, training new staff and motivating staff in pastry area
• Assisting the staff with food prep, recipes, and procedures
• Assisting on menu presentations

Qualifications

• Strong Chef de Partie or Previous Junior Sous Chef experience
• An ability to stay calm when the pressure mounts
• Strong leadership skills to motivate your brigade of chefs
• Culinary skills
• High school diploma or equivalent
• Fluent in English, oral & written, with excellent communication skills
• Role model ability, leading a large team, ready to roll up your sleeves and do what is needed to give our customers the best service with a problem-solving mentality
• Confidence in taking the lead as at times you will be required to manage the department
• Passion for high-end cuisine, love for food and motivation to deliver exceptional service
• Well presented, professional individual with a can-do, positive attitude that indulges in team success
• The ability to be a positive change champion for DO & CO, identifying key impact areas and priorities and supporting change programmes and strategies in order to gain optimal results
• Exceptional attention to detail and data driven with the ability to influence different departments to suggest, implement and track solutions
• Build strong relationships with the team, mentoring and motivating, creating a team spirit, encouraging them to be at their best
• You are a clear and engaging communicator, strong written and verbal English, and will use a variety of methods to keep the team well informed
• Flexible in the way you think, making decisions efficiently and handling change to ensure everything we do is right for our customers and the DO & CO family
• Have a great understanding and working knowledge of Operations and be the expert in delivering practical actions for its improvement by taking a hands-on approach
• Culinary education, previous experience in a similar role, or in a fast paced, high end, fresh food environment
• Good knowledge of international recipes and cooking technique
• Strong numerical reasoning ability
