Brown's Hotel is London's first hotel. It opened its doors on Albemarle Street in 1832. Since then we have hosted famous guests from all walks of life. Your key responsibilities
Are you an innovative, motivated and highly skilled chef? Excited to work in a dynamic fine-dining environment? Ready to make your mark in the kitchen of a world-leading luxury hotel? Then Rocco Forte Hotels would love to invite you to join us as Head Chef in our Charlie's restaurant.
You will be working with Adam Byatt, our Chef Director, Andrew Sawyer, Executive Chef and our talented team of chefs who are all passionate about using fresh seasonal produce whilst developing and training their team.
As a pivotal member of our management team, you will be responsible for the flawless running of the hotel’s kitchens, guiding your dedicated team to deliver exceptional dishes of the world-class calibre Rocco Forte guests expect. You will be passionate about bringing the best seasonal, local produce into a fine-dining environment and will manage and motivate your team to ensure they consistently achieve culinary excellence – nurturing their personal and professional development.
Naturally, you will bring exceptional knowledge of high-end food and wine, as well a working knowledge of and experience with a wide variety of cuisines. You will also maintain the financial control of the department, working closely with the Executive Chef to ensure targets are hit and optimum profitability is achieved.
You will have experience in a similar high-end kitchen role and be given the support to further develop your skills and career with us. Ultimately, your talent, commitment and pride in your work will make you an integral part of the Rocco Forte family.
Your responsibilities
- Manage the day-to-day operations of Charlie’s Kitchen and other hotel kitchens, ensuring the consistent delivery of five-star culinary experiences.
- Lead, motivate, and develop the kitchen team to uphold high culinary standards and support their professional growth.
- Champion the use of seasonal, locally sourced produce in innovative and diverse menu offerings.
- Collaborate with the Executive Chef to manage budgets, control costs, and achieve profitability targets.
- Maintain exceptional standards in food quality, presentation, hygiene, and safety.
