Duties and Responsibilities

As Night Chef, I will support the Executive Chef and assume responsibility for the efficient operation in the following:

  • Be responsible for the production, portion control and presentation of all Dim Sum items and smooth running of the steam section.
  • Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
  • In the absence of a manager, take full responsibility for the kitchen and production of food overnight
  • Responsible for preparation of mise en place for IRD, Breakfast buffet & display, Deli counter and restaurants.
  • Manage and control staff feeding for the night team.
  • Know and comply consistently with standard portion sizes, cooking methods, quality standards and kitchen rules and guidelines.
  • Strictly adhere to LQA standards and guest comments.

Qualifications

To execute the position of Night Chef, I must have the required qualifications, technical skills and experience in a similar role in luxury hotels with proven results and includes the following:

  • High school diploma or equivalent and at least 1 year’s kitchen experience in a full-service outlet or similar setting. Hospitality diploma/degree from a recognized hospitality school is preferred.
  • Knowledge of the use of broiler equipment and understanding of meat and fish cookery, proficient knife skills and understand farm to table concept.
  • Fluent in English; I understand that additional languages are preferred.
