Junior Sous Chef - Café Boulud
Waldorf Astoria London - Admiralty Arch is seeking a Junior Sous Chef – Café Boulud to join the pre-opening team for this highly anticipated new luxury hotel opening later this year.
This is a unique opportunity for an experienced luxury hospitality leader to join the founding team and help shape the guest experience at this landmark hotel.
Located at the end of The Mall opposite Buckingham Palace, Waldorf Astoria London – Admiralty Arch will feature 100 elegant rooms and suites and 17,500 sqft of private residences. The hotel will open with two signature restaurants - Coreus by Clare Smyth and Café Boulud by Daniel Boulud - bringing together two of the world’s most celebrated Michelin-starred chefs. Guests will also enjoy a world-class spa, state-of-the-art fitness facilities, and a collection of grand event spaces, including a ballroom for up to 320 guests.

What will I be doing?
As Junior Sous Chef for Café Boulud, you will play a key role in menu development, kitchen leadership, and operational execution. You will support the Sous Chef, Senior Sous Chef and Head Chef in guiding the brigade, ensuring culinary consistency, cost control, and an outstanding gastronomic experience for both guests and members.
· You will perform the following duties to the highest standards of luxury gastronomy:
· Contribute creatively and collaboratively to menu development in line with Café Boulud’s culinary philosophy.
· Supervise, train, and motivate the kitchen brigade to ensure a disciplined, cohesive, and high‑performing team.
· Maintain uncompromising consistency in food quality, presentation, and flavour.
· Engage professionally with guests when required, supporting positive dining experiences in the absence of senior kitchen leadership.
· Ensure optimal staffing through effective rota planning aligned with business volumes.
· Uphold brand and culinary standards through continuous training, coaching, and performance assessment.
· Monitor and control food costs to support departmental profitability and revenue objectives.
· Maintain awareness of interdepartmental operations and their impact on kitchen performance.
· Ensure full compliance with food safety, hygiene, and Health & Safety regulations at all times.
What are we looking for?
A Junior Sous Chef serving Hilton brands demonstrates technical excellence, leadership potential, and a refined culinary mindset. To excel in this role, you will bring:
· Proven experience as a strong Chef de Partie or prior Junior Sous Chef.
· A creative, thoughtful approach to cuisine and menu execution.
· Confident supervisory and team‑leading capabilities.
· A positive, professional attitude within a high‑performance kitchen environment.
· Clear and effective communication skills.
· A guest‑focused mindset with a commitment to culinary excellence.
· Impeccable grooming and professional presentation.
· Strong planning and organisational skills.
· A genuine willingness to learn, evolve, and refine culinary craft.
It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:
· Relevant professional culinary qualifications
· Flexibility to work varied shifts, including weekends, mornings, afternoons, and evenings.
· Prior experience within a luxury or ultra‑luxury hospitality or service‑led environment is highly desirable.
