Pastry Chef de Partie
Our story
Back in 2019 in Paris, two friends, Charles and Victor, opened a brasserie together - the kind of place Parisians disappear into for a 3 hour lunch.
They called it La Nouvelle Garde: a promise to eat and drink the French way, done properly, 100% homemade, cooked from scratch from the highest quality seasonal ingredients.
They served classic French dishes prepared with care, generosity and excellence in beautiful, relaxed spaces full of energy.
Guests loved it!
So they opened another one, and then another one. Each with its own name, personality and story, but always with the same love for French food and hospitality. And 10 brasseries later, it was finally time to bring it to London.
In July 2026 in Sloane Square, Brasserie Olivia was born.
This is just the beginning of our London story, and we'd love you to help write the next chapter.
The role
As a Pastry Chef de Partie, you’ll work closely with our Head Pastry Chef to prepare traditional French desserts from scratch using high-quality ingredients.
You’ll be involved in every stage of preparation, from making creams and pastry components to baking, assembling and finishing desserts.
During service, you’ll organise and run your section, making sure every dessert is prepared and presented to the highest standard, with consistency and attention to detail.
You’ll also manage your daily prep, monitor stock and par levels, minimise waste and keep your section clean, organised and ready for service.
What you'll bring
You have at least 3 years’ experience working in pastry in a busy, professional kitchen.
You have strong pastry fundamentals, including baking, dough preparation, creams, fillings and classic pastry techniques.
You have good knife skills and are confident in following recipes, working with precise measurements and producing consistent results.
You have experience preparing and presenting high-quality desserts, ideally with knowledge of classic French patisserie.
You’re confident organising your own section, managing prep and maintaining high standards during busy services.
You understand kitchen preparation, stock levels, food safety and the importance of keeping your section organised.
You communicate clearly, work well with the wider kitchen team and are open to feedback.
You’re reliable, organised and take pride in the quality and presentation of everything you prepare.
What we offer:
Average hourly pay: £18/hour (including Tronc).
Full-time role, around 45-48 hours per week.
50% discount across all Nouvelle Garde restaurants.
